Oatmeal Chocolate Chip Bars

Ingredients:
1 c. applesauce
¾ c. brown sugar
2 t. vanilla
4 egg whites
2 c. wheat flour
1 c. oats
5 oz package instant vanilla pudding
1 t. baking soda
1 t. baking powder
1 c. oats
1 c. chocolate chips
Directions:
1. Mix ingredients
2. Spread on waxed paper on cookie sheet
3. Bake at 350* for 15-25 min (depending on how dry you want them)
4. Cut into 12 bars

Oatmeal Raisin Bars

Ingredients:
1 c. raisins
1 T. water
¾ c. brown sugar
2 T. canola oil
1 c. applesauce
4 egg whites
2 T. skim milk
2 t. vanilla
1 ½ c. wheat flour
3 c. oats
1 t. baking soda
1 ½ t. cinnamon
1/3 c. walnuts, chopped
Directions:
1. Microwave raisins & water for 1 min & blend
2. Pour onto a 9x13 pan.
3. Bake at 350* for 23 min. (cut into 16 bars)
4. Glaze with icing:
½ c. powdered sugar
1 T. skim milk
¼ t. vanilla

Z-Bars


Ingredients:
2 c. oat flour
2 c. oats
2 t. baking powder
1 t. salt
½ t. cinnamon
1 c. brown sugar
1 ¼ c. applesauce
1 ¼ c. milk
2 t. vanilla
½ c. chocolate chips
6 T. choc chips + 2 t. canola oil

Directions:
1. Mix ingredients and pour onto cookie sheet.
2. Melt 6T choc chips and oil and pour on top.
3. Make at 350* for 20-25 min.  
4. Cool, then cut into 16 bars.

Baked Oats

Berry-Banana Baked Oats

Ingredients:
2 c. oats
1/3 c. brown sugar
1 t. baking powder
1 t. cinnamon
½ t. salt
2 c. milk
1 egg
3 T. butter or oil
1 T. vanilla
1 ripe banana, sliced
1 c. berries
½ c. nuts
½ c. chocolate chips
Directions:
1. Stir ingredients (except nuts & choc chips)
2. Pour into 9x13 pan and top with nuts & choc chips
3. Bake at 375* for 35-40 min. 

Apple-Raisin Baked Oats
Ingredients:
½ c. oil
½ c. honey
4 eggs
1 ½ c. milk
2 ½ c. oats
1 t. baking powder
½ t. salt
2 t. cinnamon
2 t. vanilla
2 c. chopped apples
½ c. craisins
1 c. raisins
1 c. chopped nuts
Directions:
1. Beat oil, honey, and eggs
2. Stir in remaining ingredients (top with nuts)
3. Pour onto a 9x13 pan
4. Bake at 350 for 30-40 min

Pumpkin Banana Baked Oats
Ingredients:
6 bananas
2 c. pumpkin
2 eggs
2 c. milk
2 t. vanilla
2 c. oats
½ c. brown sugar
1 t. baking powder
1 ½ t. cinnamon
½ t. nutmeg
1 T. pumpkin pie spice
1/8 t. salt
½ c. nuts (on top)
Directions:
1. Beat wet ingredients then stir in dry ingredients
2. Pour into a 9x13 pan and bake at 375* for 35-40 min


Coffee Cake

Cake Ingredients:               
1 egg                                   
¼ c. oil                                   
½ c. milk                 
1 ½ c. wheat flour 
¾ c. sugar                              
2 t. baking powder
½ t. salt
Topping Ingredients:
¼ c. brown sugar
1 T. wheat flour
1 T. melted butter
1 t. cinnamon
½ c. nuts

Directions:
1. Mix cake ingredients and pour into a 9x9 pan
2. Sprinkle topping & Bake at 375* for 25-30 min

Chocolate Fudge Brownie Cake


Batter Ingredients:
1 c. wheat flour
½ c. white sugar
2 T. cocoa
2 t. baking powder
¼ t. salt
½ c. skim milk
2 T. canola oil
1 t. vanilla
Topping Ingredients:
½ c. brown sugar
¾ c. nuts
¼ c. cocoa powder
Final Topping: 1 ½ c. hot water
Directions:
1. Mix & pour batter onto a 9x9 pan.
2. Mix and sprinkle topping ingredients
3. Pour hot water on top.
4. Bake at 350 for 35-40 min.

Chocolate Zuccini/Carrot Cake


Ingredients:
2/3 c. wheat flour
¾ c. sugar
1 t. baking soda
¾ t. baking powder
¼ t. cinnamon
¼ t. salt
½ c. cocoa powder
2/3 c. applesauce
1 egg
1 t. vanilla
1 c. shredded zucchini or carrots
½ c. choc chips (opt)
Directions:
1. Mix & Pour into a 9x9 or circle pan
2. Bake at 350 for 30-35 min

Chocolate Banana Cake

Ingredients:
½ c. butter or coconut oil                                           
1 c. sugar                                              
1 egg                                                     
1 t. vanilla                                             
1 ½ c. mashed bananas (=3)              
1 ½ c. wheat flour
1 t. baking powder
1 t. baking soda
½ t. salt
¼ c. baking cocoa               
3/4 c. choc chips

One Layer Directions:
1. Beat all ingredients, except chocolate chips
2. Pour onto 9x13 pan
3. Top with chocolate chips
4. Bake at 350 for 30 min.

Two Layer Directions:
1. Beat all ingredients, except cocoa and choc chips.
2. Add cocoa to only half of the batter.
3. Pour into 9x13 pan.
4. Top with remaining batter & choc chips
5. Bake at 350 for 30 min.

Spice or Chocolate Cake

 Ingredients:
2 eggs
½ c. canola oil
1 ½  c. honey
2 ½ c. applesauce or pumpkin
3 ½ c. wheat flour
2 t. baking soda
*2 t. cinnamon
1 t. salt
*1 t. cloves
Directions:
1. Mix & Pour into a jelly roll pan
2. Bake at 350* for 20-25 min (just until fork comes out clean- don't overbake!)
3. Top with sliced bananas or cool whip
*May replace cinnamon and cloves with  ½ c. cocoa powder

Carrot Cake or Zuccini Bread

This is low sugar, low oil and 100% whole wheat flour!
Ingredients:
4 c. wheat flour
2 t. baking powder
1 t. salt
2 c. milk
2 eggs
2/3 c. applesauce
¼ c. canola oil
½ c. sugar
2 c. shredded carrots (or zucchini)*
1 c. raisins (or chocolate chips)
*2t. cinnamon if using zucchini

Directions:
1. Mix and pour carrot cake onto 9x13 pan or zucchini bread into 2 bread pans
2. Bake cake at 375 for 20 min. or bread at 350 for 60 minutes. (or 24 muffins for 15 min)
3. May top cake with icing and top bread slices with butter.

Power Balls

Ingredients:
1 c. oats
2/3 c. coconut flakes
½ c. wheat flour or wheat germ
½ c. peanut butter
¼ c. honey
1 t. vanilla

Directions:
1. Stir ingredients until well mixed.
2. Form into 8 balls and serve.

Pumpkin Chocolate Chip Cookies

 Ingredients:
2 eggs
¾ c. sugar
½ c. applesauce
1 c. canned pumpkin
1 t. vanilla
2 c. wheat flour
1 ½ t. baking powder
1 t. baking soda
½ t. salt
2 t. cinnamon
½ t. ginger
¼ t. nutmeg
¼ t. cloves
1 c. chocolate chips
Directions:
1. Mix eggs & sugar for 2 min.
2. Add remain ingredients, drop into 24 cookies onto greased pans
(2 T. each, 12 per pan)
2. Bake at 325* for 16 minutes. Cool on racks.

Chewy, Lowfat Sugar Cookies


COOKIES
Dry Ingredients:
1 1/4 c. white flour (or 1 c. wheat flour)
3/4 t. cornstarch
1/4 t. baking powder
1/4 t. salt

Wet Ingredients:
2 T. butter (or spread)
1 egg
1 t. vanilla (2t. imitation vanilla)
1/2 c + 2T sugar
1 t. water

Directions:
1. Stir dry ingredients, then mix in the wet.
2. Gather with hands and form a ball
3. Cover with plastic wrap and chill in fridge for 1 hour
4. Preheat oven to 350*
5. Roll out and cut into small 22 cookies (18 for wheat)
6. Place on jelly roll pan and bake for 10 min
7. Sit in pan for a couple minutes, then cool on racks

ICING
Royal Icing Ingredients:
(this makes enough to decorate a double batch)
1 egg white
1 t. lemon juice
1 1/2 c. powdered sugar
Directions:
1. Whisk egg white and lemon juice until bubbles
2. Gradually beat in powdered sugar

Normal Icing:     
5T. powdered sugar           
1/4 t. vanilla
1 t. milk

Buttermilk Icing:
1c powdered sugar
2T. butter, softened
1/4t. vanilla
1T. milk (add gradually until desired consistency)

April Meal Plan

APRIL Snack & Meal Plan
This follows a 6-meals a day plan.

Healthiest Banana Oatmeal Cookies


Ingredients:
4 large bananas
2 c. quick oats
1/2 c. chocolate chips

Directions:
1. Pre-heat the oven to 350*
2. Blend/Mash Bananas
3. Stir in oats and chocolate chips
4. Form into 24 balls and place on a cookie sheet
5. Bake for 15 min.

Healthy, Low Sugar Yams/Sweet Potatoes

Ingredients:
4 lbs Yams or Sweet Potatoes (4 large size, 10 small)
2 t. brown sugar
1 15 oz can pineapple
1 c. raisins
1/2 t. cinnamon
1/8 t. nutmeg
1/4 t. salt
4 bananas, divided
1/4 c. sliced almonds


Directions:
1. Bake on pan or microwave yams until soft. Cool & Peel.
2. Blend with sugar, pineapple, raisins, cinnamon, nutmeg, salt, and 2 bananas
3. Spread onto a 9x13 casserole pan.
4. Top with nuts and 2 sliced bananas.
5. Bake at 400* for 15 min.

Snack Salad

I have been making this simple salad lately for a morning snack or combined
with a cheese sandwhich or tortilla for lunch.
It's a simple snack combination a protein (bean) with a fruit (avacado)

Ingredients:
1/2 c. beans (pinto, kidney, black)
1/2 avacado, mashed
garlic salt (sprinkled on avacado)
cabbage

Variation if having a meat or peanut butter sandwhich:
1/2 c. cottage cheese
1/2 tomato
garlic salt
cabbage

Nut Variation if having beans with lunch:
1/4 c. nuts
apples, bananas, or craisins
cabbage
*fruit cabbage honey-vinegar dressing
