Chex Candy & Muddy Buddies

Chex Candy Ingredients:
medium batch                        Large batch
9 1/3 c. Any Chex Cereal         14 c.
2/3 c. coconut flakes                   1 c.
1/2 c. slivered almonds              3/4 c.
1/2 c. butter                                3/4 c.
2/3 c. sugar                                 1 c.
2/3 c. light corn syrup                 1 c.

Directions::
1. Mix cereals, coconut, and almonds in a large bowl
2. In a saucepan, bring butter, sugar, and syrup to a boil for 2 min
3. Pour over cereal mixture and stir to coat
4. Cool on cookie sheet

Muddy Buddies Ingredients:
9 c. corn chex (or shreddedswheat)
1 c. semi sweet chocolate chips
1/2 c. peanut butter
1/4 c. butter
1 t. vanilla
1 1/2 c. powdered sugar

Directions:
1. Measure cereal in a large bowl
2. Microwave cchips, pbutter, and butter for 1 min
3. Stir, microwave for 30 sec more
4. Pour over cereal
5. Shake in a bag with powdered sugar


Wiler's Light Slurpee

1 c. water
1 packet wiler's light
2 c. ice cubes (16)
-Blend until smooth

Lemon Frosty (chick-file copycat)




Regular Version Ingredients:
2 c. lemonade
  (1c. lemon juice concentrate +
   1 c. ice water + 3-6T sugar)
4 c. vanilla ice cream (1.75 quart container)
1-2c. Ice

Thicker version:
1 c. water
2/3 c. lemonade concentrate
1/4 c. sugar
5 c. vanilla ice cream
2 c. ice (16 cubes)

Lemon/Lime Version:
1 1/3 c. lemonade
    (2/3 c. lemon juice concentrate+
     2/3 c. ice water + 2T sugar)
2/3 c. limemade
    (1/3 c. lime juice concentrate+
     1/3 c. ice water + 1 T. sugar)
4 c. vanilla ice cream
1-2c. ice

Healthy Version:
3 c. Greek Yogurt
6 c. Ice cubes (30 cubes)
9-12 T. sugar (9T. if yogurt is sweetened)
9 T. lemon or lime juice concentrate
(or Fresh squeezed) 

Powdered Milk Version:
1c lemon juice 
1/2c powdered milk
1/4c sugar
3c ice

Chocolate Revel Bars

Oat Mixture Dry Ingredients:
1/4 c. greek yogurt
3 T. canola oil
1/2 c. white sugar
1/2 c. brown sugar
1 egg
1 t. vanilla
Oat Mixture Wet Ingredients:
1 1/4 c. wheat flour
1 1/2 c. quick oats
1/2 t. baking soda
3/4 t. salt

Chocolate Layer Ingredients:
1/4 c. hot water
1/2 c. powdered milk
6 T. sugar
1/4 t. salt
1 T. canola oil
1 c. milk chocolate chips
1 t. vanilla
1/2 c. chopped walnuts (optional)

Directions:
1. Preheat oven to 350*
2. Stir dry oat mixture ingredients.
3. Beat wet oat mixture ingredients, then stir into dry ingredients.
4. Press 2/3 of oat mixture on bottom of 9x13 brownie pan (2+ c)
(double this recipe for a jelly roll pan)
5. Blend water and powdered milk, then heat in a saucepan
or microwave bowl with remaining chocolate layer ingredients
6. Spread chocolate mixture over oat mixture
7. Use your fingers and dot remaining oat mixture over chocolate
8. Bake for 20 min- until top is slightly browned.
9. Cool, then cut into 24 squares

Moist Carrot Cake (Whole Wheat, Low Fat)

Dry Ingredients:
2 c. wheat flour
1 1/2 c. sugar
1 1/8 t. baking soda
1 t. salt
2 t. cinnamon

Wet Ingredients:
2 eggs
1 c. crushed pineapple with juice (8 oz can)
1/2 c. canola oil
*1/2 c. +2T. greek yogurt
*1/2 c. + 2T. skim milk
*(or 1 1/4 c. buttermilk)
1 t. vanilla (2t. if imitation)

Additional Ingredients:
2 c. shredded carrots
1 c. coconut flakes
1 c. walnuts, small pieces
1/4 c. raisins (1c. if you're a raisin lover)

Directions:
1. Stir dry ingredients in a bowl
2. Beat wet ingredients, then stir into dry (don't overstir)
3. Fold in additional ingredients
4. Grease & flour a deep 9' cake pan
5. Bake at 350* for 60 min.
6. Cool, then frost with cream cheese frosting
(may slice the cake in half to put some frosting in the middle)
7. Sprinkle with more walnuts

Cream Cheese Frosting:
8 oz low fat cream cheese, softened
1 c. powdered sugar
1 t. vanilla


Pero

1 c. hot water
3T. powdered milk
1t. pero
1t. sugar
1/8t. vanilla

Fire Crackers

Seasoning Ingredients:
For 1 box of saltine crackers:
1 T. red pepper flakes
1 ranch packet or:
    1 t. parsley
    1/2 t. salt
    1/2 t. onion powder
    1/4 t. garlic powder
    1 T. +3/4t. powdered milk

Directions:
1. Mix seasoning in a bowl
2. Spread crackers out and spread oil on top of crackers
(1/2c. canola oil for 1 box of crackers)
3. Sprinkle seasonings on top

LARGE batch of seasoning
6T. red pepper flakes
2 T. parsley
1 T. salt
1 T. onion powder
1 1/2 t. garlic powder
1/2 c. powdered milk

Chicken Noodle Soup (Campbell's copycat)

Ingredients:
2T. olive oil
1 onion, chopped
1 c. celery, diced
1 c. carrots, diced
10 c. water
2 c. cooked chicken or turkey, diced
3T. chicken bouillon
1/4 t. dried thyme
1 bay leaf
1/4 t. dried marjoram or 1/8t oregano
1/8 t. black pepper
1/2 t. salt
1 c. spaghetti, broken into 2" pieces (or 2c cooked rice)

Directions:
1. Saute onion, celery, & carrots in oil in the bottom of a pot on medium heat.
2. Add water and bring to a boil.
3. Add remaining ingredients and boil until spaghetti is soft (10 min)

Chicken Enchilada Soup

Ingredients:
2 t. olive oil
1/2 c. onion, diced
1/2 T. minced garlic
3 c. water
1 T. chicken bouillon
1 can tomato sauce (8oz)
1 lb cooked chicken (2c)
1 can black beans (1 3/4 c.)
1 can diced tomatoes (15 oz)
1 can corn (2c)
1 t. cumin
1/2 t. oregano
1/4 c. fresh cilantro
1-2t. chili powder
salt
pepper

Directions:
1. Saute onion and garlic in oil in the bottom of a pot on medium heat
2. Stir in remaining ingredients and simmer for 10 min.
3. Serve with sour cream, cheese, and tortilla chips

Egg Rolls


Ingedients:
1 package egg rolls (21)
1 lb pork or chicken (2c)
1/2 c. onions, chopped
3/4 c. shredded carrots
2 c. shredded cabbage
1 T. sesame oil
3/4 t. season salt (1/4 t. celery salt, 1/4 t. garlic salt, 1/8 t. pepper, 1/8 t. salt)

Directions:
1. Mix stuffing in a bowl
2. Place 3T. stuffing onto each egg roll
3. Preheat oil to 325-250* or preheat oven to 400*
4. Wrap each roll like a burrito- seal edges with water
5. Fry in oil for 8 min (4 min, flip- 4 more min) or bake for 12 min.

Spaghetti With Meatballs


Serves 8 (makes 24 meatballs)
MEATBALL ingredients:
20 oz (1.3 lb) lean ground turkey
1/4 c. whole wheat bread crumbs
1/4 c. cheese
1 t. dry parsley
1 egg
1/2 t. minced garlic
1 t. salt
1/8 t. pepperoni

Sauce ingredients: 
2 cans tomato sauce
2 cans diced tomatoes (can blend)
2 T. dry basil
3/4 t. salt
1/4 t. pepper
(or 2 24oz cans spaghetti sauce)

Directions:
1. Form golf ball size balls (1/8 c.) out of the meat
2. Cook meatballs in sauce for 20 min. simmering
3. Boil 1 lb. spagetti noodles in pot of water for 8-10 min 
4. Drain noodles and serve with sauce on top

Serves 24 (times meatballs by 3 for big crowds or freeze for later use)
4 lbs. lean ground turkey
3/4 c. bread crumbs (2 pieces of wheat toast)
3 T. dry parsley
