Natural Yeast or Sourdough Breadsticks

Ingredients:
2 1/2 c. Natural Yeast (or white Sourdough start)
1 3/4 c. Warm Water
3 T. wheat gluten
4 1/2 T. sugar
4 1/2 T. canola oil
1 1/4 t. baking soda (to get rid of sour dough taste)
1 3/4c. wheat flour (or white flour)
1 T. salt
3 c. wheat flour (or 4 1/4c white flour)

Directions:
1. Beat all ingredients, except the last flour
2. Knead in the last flour for 7 min.
(may need to add 1/4 c. flour if dough is too sticky)
3. Let sit in bowl, covered, for 5-6 hours (until double in size)
4. Form into 36 breadsticks and place on a 3 jelly roll pans (12 on each pan)
5. Let rise for 3-5 more hours (until double in size)
6. Bake at 400* for 15 min. (until golden brown)
7. Brush with oil and garlic salt
8. Take off pan and cool on rack

Olive Garden Style Breadsticks



WHEAT/WHITE Breadsticks:
(Small Batch: 16-24)      (Bigger Batch: 24-36)
Ingredients:
2 c. warm water              3 c. warm water
2T+2t. wheat gluten       1/4 c. wheat gluten
2T+2t. sugar                   1/4 c. sugar
4t. yeast (saf instant)      2 T. yeast
2c. wheat flour               3 c. wheat flour
2t. salt                             1 T. salt
2 c. white flour              3 c. white flour

Directions:
1. Mix all the ingredients except salt and last part of white flour with beaters.
2. Let rest for 5 minutes
3. Beat in the salt, then knead in the white flour for 6 minutes.
     Let sit for 10 more minutes.
4.  Divide into pieces and roll out into breadsticks
5. Place on 2 (or 3)  jelly roll pans.... 8-12 on each pan

6. Let rise, covered for 30 minutes
7. Preheat oven to 400* (let rise for 10 more minutes while preheating)
8. Bake for 14 minutes, just until golden brown on top
9. Melt 1-2 T. butter and spread on top, then sprinkle generously with garlic salt
before or after baking

WHITE BREADSTICKS:
(Makes 16-24)                    (Makes 24-36)
Ingredients:
1 2/3 c. water                2 1/2 c. warm water
2 T. sugar                     3T + 1t. sugar
1 T. yeast                     5 t. yeast
2 c. white flour            3 c. white flour
1 1/2 t. salt                  2 1/2 t. salt
2 c. white flour            3 c. white flour

WHOLE WHEAT BREADSTICKS:
(Makes 48- 4 pans- 12 on each pan)
Ingredients:
8 c. wheat flour
6 T. gluten
6 T. sugar
2T. + 2t. yeast
4 t. salt
4 c. warm water
6T. oil (for on top with garlic salt)

Alfredo Dipping Sauce:
1/4 c. butter, melted
1/2 t. garlic powder
1/4 t. salt
1/16 t. pepper
1 c. sour cream
--heat through, then add--
1 T. greek yogurt
6 T. mozzarella cheese

Whole Wheat Breadsticks

Ingredients:
½ c. Warm water
½ T. Powdered Milk
½ T. Wheat gluten
2 T. Sugar
2 T. Oil
1 T. Yeast (SAF instant)
1 c. Wheat Flour
½ t. Salt
2 c. Wheat Flour

Directions:
1. Mix all ingredients up to the first cup of flour. 
2. Let sit for 5 minutes to Sponge.
3. Mix in salt, then knead in remaining flour for 5-7 minutes.
4. Let dough rest/rise for 10 minutes, loosely covered.
5. Form into 12 breadsticks and place on a greased 9x13 pan.
6. Rise for 45 minutes.
7. Bake at 375* for 18 minutes (or until golden brown)
8. Cool on rack and brush tops with butter (and seasonings if desired)

*(This is the same dough recipe for 12 hamburger buns)

FLAT BREAD

This is like breadsticks. Donny's mission president's wife shared it with us and we loved it.

Wheat Flour Flatbread Ingredients:
2 T. wheat gluten
4 c. wheat flour
4t. sugar
4t. yeast
2 1/2 t. salt
2 1/2 c. warm water
(3-5 T. oil or melted butter)

White Flour Flatbread Ingredients:
4 c. white flour
1 T. sugar
1 T. yeast
2 t. salt
2 c. warm water
(3-4 T. oil or melted butter)

Wheat/White Flatbread Ingredients:
1 T. wheat gluten
2 c. wheat flour
2 c. white flour
3 1/2t. sugar
1T + 1/2t yeast
2 1/4t. salt
(3-4 T. oil or melted butter)

Directions:
1. Proof yeast with sugar and water for 5 minutes. Stir in remaining ingredients (except oil).
2. Let rise in covered bowl for 40 min.
3. Pour 1 T. oil or flour on a cookie sheet. Spread oil out with your hands.
4. Press dough to cover the sheet. (can use more oil if needed on top)
5. Spread  3-5 T. oil or melted butter on top
6. Season with salad supreme or garlic salt or Parmesan or whatever.
7. Rise for 15 minutes while pre heating the oven. Bake at 400* for 20 min.
8. Cut into 16 slices and serve.

*flat bread and pizza need 4 c. flour per jelly roll pan
