INGREDIENTS:
2 c. wheat flour
1 t. baking soda
1 t. cinnamon
1 t. salt
1/2 t. ginger
1/2 t. cloves
2 c. pumpkin
2 c. sugar
1/2 c. oil
1 t. vanilla
2 eggs
DIRECTIONS:
1. Preheat oven to 350*
2. Stir dry ingredients, then add/stir in wet ingredients
3. Spread on greased cookie sheet
4. Bake for 18 min (or just until toothpick comes out non-doughy)
5. Top with Cream Cheese Frostin: 8 oz softened cream cheese, 1 c. powdered sugar, 1 t. vanilla

SCONES or NAVAJO TACOS or DONUTS
INGREDIENTS: (16 Scones)
2 c. warm water
1/4 c. powdered milk (or just use milk instead of water above)
3 T. sugar (6T. for donuts)
2 c. flour (wheat or white)
5 t. yeast (saf instant)
2 t. salt
2- 2 1/2 c. flour (wheat or white)
DIRECTIONS:
1. Knead all ingredients for 5 minutes (add last flour in slowly- don't add too much)
2. Sit/Rise covered for 20-40 min
3. Roll out on greased or floured counter to 1/4" thick
4. Cut into 16 scones or 8 navajo tacos
5. Preheat oil to 375* and cook until just brown on each side
6. Drain on a plate with a paper towel

-For navajo tacos, serve with blended beans, meat, lettuce, cheese, sourcream, salsa

½ c. water
4 c. pinto beans
½ t. salt
2 T. taco seasoning
BAKING POWDER FRY BREAD
4 c. flour
2 T. powdered milk
1-2 T. sugar (1T for pizza)
1 T. baking powder
1 3/4 t. salt
1 3/4 c. water
-Divide into 6 fry breads (OR PERSONAL PIZZAS)
Pumpkin Scrambled Eggs
OK, So i am loaded with pumpkin after Halloween and looking for non-sweet ways to use it.
This worked great!
8 eggs
1 c. pumpkin, baked+ blended
salt and pepper
-Stir
-Fry or microwave a smaller version in a bowl (2 T. pumpkin + 1 egg)

Healthy Pumpkin Bread
This is whole wheat, low sugar, low fat!
Ingredients:

1 1/2c. sugar
1 c. powdered milk
2t. baking soda

1/2t. cloves (or 1/4 t. nutmeg)
1 3/4 - 2c. pumpkin (15-16oz)
2/3c applesauce
4 eggs
1c. chocolate chips
Directions:
1. Preheat oven to 350*
2. Stir dry ingredients, then beat in wet ing.
3. Pour into 6 mini loaf pans or 2 regular loaf pans
4. Bake mini loaves for 25-28min, regular loaves for 50-56min.

Ground Beef/Turkey Stew
Ingredients:

6 c. diced potatoes
4 carrots, diced
1 bag frozen peas
2 t. beef bouillon
1 lb turkey burger
1 large onion
1 t. minced garlic
2 T. flour
2 c. milk
1 1/2 t. salt
1/4 t. pepper
1 can tomato sauce
1 bay leaf
optional: corn + tomatoes
Directions:
1. Boil water, potatoes, carrots, peas, and beef bouillon in a pot for 15 min
2. In a frying pan, cook meat, onion, and garlic on medium high heat until well done
3. Stir in flour and milk into the meat and stir until thickens
4. Add the remaining ingredients, then combine with the potatoes and water

Spaghetti Mac
Ingredients:
2 c. Macaroni Noodles (8oz)
1 lb. turkey burger
1 c. onions
garlic salt
1 jar spaghetti sauce (24 oz)
1 can corn (15oz)
Directions:
1. Boil 2 c. macaroni noodles in a medium pot of water for 10 min
2. Brown turkey burger, onion, and sprinkle on garlic salt
3. Drain the noodles and put back into the pot with the meat and onions
4. Add the spaghetti sauce and drained corn and heat through

Ingredients for 12:
2 1/2c warm water
5t. Yeast
2T. Sugar
2T. Oil
2 1/2t. Salt
6 1/4c. Flour
Directions:
1. Mix water and yeast and sit for 5 min
2. Add remaining ingredients and knead for 5 min.
3. Cover and let rise until double (45-60min)
4. Form into 12 large balls and place in big muffin tins or on a cookie sheet.
5. Let rise until double (45min)
6. Bake at 400* for 15min.
