Wheat Berry Fruit Cereal/Salad


Serves 8
2 ½ c. wheat boiled in 5 c. water (= 7½ c. wheat berries)
½ c. wheat flour
1 ½  t. cinnamon
¾ t. vanilla
1/8 t. nutmeg
4-6c. greek yogurt
6 c. fruit (2 c. pineapple with juice+4 c. grapes or apples)
2/3 c. nuts or raisins (opt)
1/3 c. sugar

Serves 6
2 c. wheat boiled in 4c. water (=6c. cooked)
1/3c. wheat flour
1 t. cinnamon
1 t. vanilla
3 c. greek yogurt
4 c. fruit (1can pineapple + 2apples+ 2bananas)
½ c. nuts or raisins (opt)
¼ sugar 

*Notes on cooking wheat berries:
1. Cook wheat and water in a 1:2 ratio and it will triple in size.
2. Bring water to a boil, add wheat, cover and simmer while oven heats to 350*
3. Place tight lid on pot and put in oven.
4. Turn oven off and place pot in, Leave for a couple of hours (or overnight)
5. Drain excess water and refrigerate.

Protein Bars


(Serves 32)
DRY INGREDIENTS:
6 c. oats
2 c. wheat flour
1 t. salt
1 t. cinnamon
2 c. Raisins or Chocolate chips
WET INGREDIENTS:
1 ½ c. soft tofu or plain yogurt or white beans
¼ c. canola oil
1 c. brown sugar
1 c. peanut butter
1 c. applesauce
4 eggs
1 t. vanilla


DIRECTIONS:
1. Preheat oven to 350*
2. Stir dry ingredients in a very large bowl.
3. Stir wet ingredients in a separate bowl.
4. Stir the wet into the dry ingredients.
5. Spread onto greased cookie sheet.
6. Bake bars for 20-25 min. (until knife comes out clean)
7. Cut into 48 squares (or 32 bars)
(or a 9X13 brownie pan is half the recipe)
