Acai Bowls

 

Serves 4
Acai Substitute:
1/2 c. milk
1 frozen banana, chopped
1 c. frozen blueberries
1 c. frozen fruit (like pineapple)
-Let frozen things sit in blender for 10 min to soften, then pulse blend

Layer:
1. Acai blend
2. Chopped fruit (like strawberries, bananas, mangos)
3. Drizzle honey
5. Drizzle melted nutella
6. Sprinkle Coconut

Pumpkin Pancakes

Ingredients:
Serves 4-6

1 1/2 c. oat flour

1/2 c. oats

1t. Cinnamon

1t. Pumpkin spice

1 t. salt

1t. baking soda

3 T. sugar

1/4 c. chocolate chips    

2 c. pumpkin puree     

4 eggs

½- 1c. Milk (½ c. if homemade, 1 c. if store bought pumpkin)

2t. vanilla


Directions:
1. Stir dry ingredients, then whisk in wet ingredients
2. Pour onto greased skillet (1/4c. batter per pancake)
3. Flip when bubbles form (Makes 24 pancakes)

*To make pumpkin puree, bake a carved pumpkin for 1 hour at 400*.
Scrape off the outer hard orange shell, chop and blend the insides.

2 1/4 c. oat flour        3 c. oat flour

*3 c. pumpkin puree      *4c, pumpkin (1 large can)
6 eggs                          8 eggs
3/4c- 1 1/2 c. milk         1-2c. milk
1 T. vanilla                   1 T. +1t. vanilla

Baked Oats

Berry-Banana Baked Oats

Ingredients:
2 c. oats
1/3 c. brown sugar
1 t. baking powder
1 t. cinnamon
½ t. salt
2 c. milk
1 egg
3 T. butter or oil
1 T. vanilla
1 ripe banana, sliced
1 c. berries
½ c. nuts
½ c. chocolate chips
Directions:
1. Stir ingredients (except nuts & choc chips)
2. Pour into 9x13 pan and top with nuts & choc chips
3. Bake at 375* for 35-40 min. 

Apple-Raisin Baked Oats
Ingredients:
½ c. oil
½ c. honey
4 eggs
1 ½ c. milk
2 ½ c. oats
1 t. baking powder
½ t. salt
2 t. cinnamon
2 t. vanilla
2 c. chopped apples
½ c. craisins
1 c. raisins
1 c. chopped nuts
Directions:
1. Beat oil, honey, and eggs
2. Stir in remaining ingredients (top with nuts)
3. Pour onto a 9x13 pan
4. Bake at 350 for 30-40 min

Pumpkin Banana Baked Oats
Ingredients:
6 bananas
2 c. pumpkin
2 eggs
2 c. milk
2 t. vanilla
2 c. oats
½ c. brown sugar
1 t. baking powder
1 ½ t. cinnamon
½ t. nutmeg
1 T. pumpkin pie spice
1/8 t. salt
½ c. nuts (on top)
Directions:
1. Beat wet ingredients then stir in dry ingredients
2. Pour into a 9x13 pan and bake at 375* for 35-40 min

Cold Oats

Serves 12 single grain
3 c. quick oats
3 c. skim milk
3 c. greek yogurt
¾ t. cinnamon
½ t. vanilla
¾ c. nuts
6 c. fruit (peaches)
sugar- opt ( ½ t. on each serving)

6 c. veggies (peas) in it or off to the side

Serves 8 single grain
2 c. quick oats
2 c. skim milk
2 c. greek yogurt
½ t. cinnamon
¼ t. vanilla
½ c. nuts
4 c. fruit (peaches)
sugar- opt ( ½ t. on each serving)

4 c. veggies (peas) in it or off to the side

Directions:
1. Soak oats, milk, and yogurt over night in a covered bowl in the fridge

2. Add remaining ingredients in the morning

DOUBLE GRAIN:
Ingredients:
(Serves 8)                    (Serves 6)
4 c. skim milk               3 c. skim milk
4 c. plain yogurt            3 c. plain yogurt
4 c. quick oats              3 c. quick oats
¼ c. oat flour                ¼ c. oat flour
½ c. raisins                  
3 c. fruit (1 can)            3 c. fruit (1 can)
½ c. chopped nuts        1/3 c. chopped nuts
3-4 T. sugar                  3 T. sugar
1 t. cinnamon                1 t. cinnamon
1 t. vanilla                     1 t. vanilla

Directions:

1. Soak milk, yogurt (or kefir), and oats in the fridge overnight.
(cover bowl with a lid)
2. In the morning, stir in fruit (or slice fresh fruit)
(our favorites are canned peaches, fresh bananas, or frozen strawberries)
3. Stir in remaining ingredients and serve.
(May top with nuts)

Hot Oatmeal

INSTANT OATMEAL PACKETS
(Makes 24 packets- 1/2c. each)
Ingredients:
10 c. quick oats (4c. blend into oat flour in blender, 6 c. unblended)
1 c. brown sugar
1 c. powdered milk
2 t. cinnamon
2 t. salt
Directions:
1.Measure 1/2 c. mixture into a bowl (or 2/3 c. for large serving)
2. Add 2/3 c. milk or water (or 1 c. for large serving)
3. Microwave for 1 min. Stir.  (or 1 min, 30 sec for large serving)
4. Microwave for 30-60 sec. Stir until thick.
5. May add 1/3 c. more milk if desire less thick

SERVES 1 large- instant oatmeal
6 T. oats
4T. oat flour
1 T. brown sugar (1/2T for chocolate)
1 T. powdered milk (or 2T hot chocolate powder)
1/8 t. cinnamon
1/8 t. salt
1 c. milk
-Cook 1 1/2 min, stir, cook 30-60 sec more

Bigger Batches of Instant Oatmeal
Ingredients:
Serves 8       Serves 12
2 1/4c.      3 c. quick oats
1 1/2 c.     2 c. oat flour
6 T.           1/2 c. brown sugar
6 T.           1/2 c. powdered milk
3/4 t.          1 t. cinnamon
3/4 t.          1 t. salt
6 c.            8 c. milk
Directions:
1. Mix dry ingredients in a pot with the heat off
2. Add hot water and turn on to medium heat
3. Stir until thickens
(may add an additional 1.5c water if you desire it less thick)

THICK OATMEAL w/Bananas
Serves 8
1. In an unheated pot, stir 4 c. oats  + 1 1/2 c. powdered milk + 2c. walnuts
    1/4 c. brown sugar + 2 T. white sugar + 1 t. salt + 1 t. cinnamon
2. Pour 4 c. hot water + 1 t. vanilla over the oat mixture & stir.
3. Heat on med-high until thick, stirring constantly.
4. Take off heat and stir in 8 sliced bananas (or 6 bananas + 2 c. berries)

OATMEAL With PEACHES
Serves 8
1. Boil 7 c. water  (8c if using fresh or frozen peaches)
2. In a separate bowl,
   Stir 4 c. oats + 1 1/2c. powdered milk + 1 t. salt + 1 t. cinnamon
3. Whisk oat mixture into boiling water
4. Reduce to medium-low heat, stir until thick.
5. Take off heat and add 1 quart can of peaches with juice (or 4c fresh)
and 2-4T. sugar if desired

OATMEAL With BANANAS
Serves 8
1. Boil 6 c. water
2. Stir in 4c. oats + 1 t. salt + 1 t. cinnamon (optional)
3. Reduce to simmer, stir until thick.
4. Take off heat and add blended banana/milk:
      2 c. water + 1 1/2 c. powdered milk + 4 bananas
       + 1/4 c. sugar + 1 t. vanilla

OATMEAL With APPLESAUCE
Serves 8
1. Boil 4 c. water
2. In a separate bowl,
   Stir 4 c. oats + 1 1/2c. powdered milk + 1 t. salt + 1 t. cinnamon
3. Whisk oat mixture into boiling water
4. Reduce to medium-low heat, stir until thick.
5. Take off heat and add 1 quart (4cups) applesauce
and 2-4T. sugar, depending on how sweet the applesauce is.

REGULAR OATMEAL- LARGE BATCHES
Serves 12 
6 c. quick oats
2 c. powdered milk (stir in with oats before adding water)
12 c. hot water
½ t. cinnamon
1 ½t. salt 
¾ t. vanilla (opt)
6-8T. Sugar
-Cook until thick on medium-high heat.

Serves 8  
4 c. quick oats
1½ c. powdered milk (Stir in with oats before adding water)
4 c. water 
4 c. applesauce * optional (or 4 more cups of water)
1 t. cinnamon
1t. salt 
2-6T. sugar (2T if using applesauce)
1/2 c. peanut butter or 1 c. nuts (optional)

*Pumpkin Variation:
-Replace applesauce with pumpkin puree.
Add some pumpkin spices to the cinnamon (1/2 t. ginger, 1/8 t. nutmeg)
-Double the sugar or add a sweet fruit like bananas

BASIC OATMEAL:
(Serves 1)                                      
1 c. milk                                         
½ c. quick oats             
1/8 t. salt                
1/8 t. cinnamon            
1/2 T. sugar  (or 1 t. sugar + 1 T. raisins)           

Directions:
1. Cook milk, oats, salt, and cinnamon in a large pot on medium-high heat until thick. (#7)
2. Stir in raisins and top with sugar and nuts if desired

Granola


A very delicious and healthy granola recipe that has no oil is on food network:
low calorie granola
LOW CALORIE GRANOLA: (food network)
Ingredients: (Serves 16)
8 c. oats
2 t. cinnamon (optional)
2 c. nuts
1 t. salt (only us 3/4 t. salt if you don't add any nuts)
1 1/2 c. brown sugar
1/2 c. water
4 t. pure vanilla

Directions:
1. Stir oats, cinnamon, nuts, and salt in a large bowl
2. Microwave brown sugar & water for a couple of minutes
3. Stir in vanilla, then add wet ingredients into the dry ingredients.
4. Bake on 2 cookie sheets, lined with parchment paper, at 275* for 45 min.
(Rotate oven racks half way through baking time)
5. Cool completely, then store in an airtight container.
(1 serving= 1c -2T. cooked granola)

TRADITIONAL GRANOLA
DRY INGREDIENTS:
Double        Single                                                         
12 c            6 c. oats                                                     
1 t.              ½ t. salt                                                    
1 c.              ½ c. dry milk                                              
1 1/3 c.        2/3 c. coconut                                             
1 c.              ½ c. sunflower seeds                                   
1c.               ½ c. chopped nuts                                      
½ c.             ¼ c. wheat flour                                            
1 T              ½ T. cinnamon (or 1 t. if you like less)
1 1/3 c         2/3 c. raisins (after cooked)

WET INGREDIENTS:
2/3 c            1/3 c. canola oil (or melted butter)
1 1/3 c         2/3 c. honey
2 t.              1 t. vanilla      

DIRECTIONS:
1. Preheat oven to 375*
2. Stir dry ingredients in a very large bowl.
(can chop nuts in blender for a few seconds if needed)
3. Place wet ingredients in a small bowl.
4. Heat wet ingredients in the microwave for 1 minute, then whisk well. 
5. Stir wet ingredients into dry ingredients and distribute it evenly.
6. Put into 2 brownie pans and bake for 15 minutes, stirring after 7 minutes.
Or 2 cookie sheets for double batch (DO NOT OVERCOOK)
7. Take out of the oven and sprinkle 1/3 c. raisins in each pan.
(2/3 c. for each cookie sheet)
8. Serve with yogurt or milk (1/2 c. granola + 1/3 c. yogurt per serving)
(I flavor a quart of plain yogurt with 3 T. sugar and 1 t. vanilla first)
*The single batch makes 12 c. granola, serving 12 people twice (with 1/2c. serving each)
*The double batch makes 24 c. granola, serving 12 people 4 times or 8 people 6 times
(In our house, everyone eats a 1 1/2 servings,
which is 3/4c. granola + 1/2c. greek yogurt (or 1 c. milk),
 so the double batch serves 8 of us 4 times))

SIMPLE GRANOLA 
Ingredients:
Small Batch                  Large Batch
¾ c. oats                   11 c. oats
¾ t. salt                        1 t. salt
¾ c. wheat flour            1 c. wheat flour
2 t. cinnamon                1 T. cinnamon
½ c. canola oil              2/3 c. canola oil
1 c. honey                    1 1/3 c. honey
1 ½ t. vanilla                 2 t. vanilla

Directions:
1. Pre-heat the oven to 375*
2. Stir dry ingredients in a very large bowl.
3. Melt wet ingredients in a microwave measuring bowl or on the stove.
4. Stir into dry ingredients.
5. Pour smaller batch onto 2 brownie pans, or larger batch onto 2 cookie sheets.
6. Bake for 15 minutes, switching pans halfway if using cookie sheets.
7. Slice bananas and place in bowls (½ banana per person)  
8. Flavor 6 c. plain yogurt with 6 T. sugar and ¾ t. vanilla
(or 4 c. plain yogurt + ¼ c. sugar + ½ t. vanilla for a family of 6)
9. Pour 2/3 c. flavored yogurt on top of the bananas in each bowl.
10. Sprinkle 2/3 c. cooked granola on top of the yogurt in each bowl.

*The small batch makes about 12 cups total, which serves 8 people twice with 2/3 c. per serving.
*The large batch makes about 16 cups total, which serves 6 people four times with 2/3 c. per serving.

Large Batch Simple Granola
18c rolled oats
5c white wheat flour
2c powdered mik
3T. Cinnamon
4t. Salt
2 1/2c brown sugar
2c canola oil
2c water
 250* 45 min 4 cookie sheets
 Crunch, stir it up, rotate racks
 30-45 min again... Really brown
 Totally cool down
