Strawberry Syrups/Sauces (runny jam)

Strawberry Jam


Ingredients:
2 lbs strawberries (about 5 1/2 cups)
1 apple,chopped 
1 c. sugar
1 T. fresh lemon juice

Directions:
1. Blend until smooth
2. Pour 4 pint jars 3/4 way full
3. Freeze or Refrigerate.

Apricot Syrup
5 1/2 c. apricots (4 c. blended)
1 c. pineapple w/juice
1 c. sugar
1 T. fresh lemon juice (optional)

ANY FRUIT SYRUP Syrup
4 c. blended fruit
1 c. apples
1/2 c. sugar (peaches)
(1 c. for tart fruit- apricots or strawberries)
1 T. lemon juice (optional- to prevent browning)

Fresh Applesauce
1 c. water
6 1/2 c. cored/halved apples
1/2 t. cinnamon (optional)
1/4 c. sugar (only if apples are tart)
-blend until smooth

Fresh Grapejuice
1 1/2c. water
4 c. grapes
2 T. sugar
-blend until smooth (may freeze in jars)

FREEZER STRAWBERRY JAM (with Pectin)
2lb Strawberries, blended (4c)
2 c. sugar
6T. pectin
-Blend strawberries. 
-Microwave 1c. blended strawberries to get hot enough to mix/dissolve pectin in.
-Stir in all blended strawberries and sugar- Stir rigorously for 3 min.
-Let sit for 10 min. 
-Pour into 3 plastic containers (2c volume) and freeze

Tuna Salad Sandwhiches


TUNA CELERY SANDWHICH (Serves 8)
Ingredients:
4 cans tuna (12 oz total)
1 c. chopped celery (2 stalks)
1 c. peas or chopped broccoli (or 2 more stalks of celery)
½ small red onion, diced
¼ c. +2T miracle whip light
¼ c. plain yogurt
½ T. apple cider vinegar

directions:
1. Cut fruit or veggies
2. Open cans of meat and drain
3. Stir all ingredients in a bowl.
4. Cut 16 slices of bread
5. Spread salad ingredients on to make 8 sandwiches

TUNA KALE SANDWHICH (Serves 8)
INGREDIENTS:
4 cans of tuna
1/4 c. olive oil
2 mahsed avacados (or 1/4 c. miracle whip light)
1/2 t. creole seasoning
4 c. kale, finely chopped (or 4 stalks of celery)

-Serve as a salad or on bread for a sandwhich

creole seasoning mix:
2 1/2 t. paprika
2 t. salt
2 t. garlic powder
1 t. black pepper
1 t. onion powder
1 t. cayenne pepper
1 t. oregano
1 t. thyme

5 Words of Nutrition Wisdom

WATER,  GRAINS,  BEANS,  VEGGIES,  FRUITS

With so many diets out there, it can be confusing as to which one is "right."
As I study nutrition principles, I always compare what I learn to the Word of Wisdom to know if they are "true" principles. The Word of Wisdom, found in D&C 89 is from God- whose motive is purely to bless us with health and wisdom.  We often only remember it by what it warns us NOT to eat, but the right foods TO eat are also contained there. As our family has experimented with good foods, we have changed line upon line. It takes time and practice to learn and apply true principles.

I have tried to simplify it down to these 5 food words in order to share nutrition in an un-overwhelming way.  We make these foods a part of our daily habits and we don't make up additional laws that take us "beyond the mark." This means we can be flexible and adaptable outside of our home and regular routine. It also means we feel we are at a point where we are "healthy enough"- so it doesn't consume our time and unbalance other things we value.  As a mother, I feel I am primarily responsible for the nurture of my children (See The Family: A Proclamation to the World). This entails nurturing both their bodies and their spirits. These 5 foods are part of basic food storage, and home gardening, so eating them helps not only in nutrition, but also in self-reliance and provident living= frugal and healthy!


1.WATER 
Drink water for your thirst instead of sugary drinks.

2. GRAINS 
Eat whole grains (wheat, oatmeal, brown rice) instead of processed grains (white flour, cereal, white rice)
The Word of Wisdom says "Wheat is for man."
Whole grains aren't stripped of their fiber and nutrients.
We love making and eating wheat bread, oat or wheat cereals and cookies.

3. BEANS 

Eat beans and/or lean meats for protein. 
The word of Wisdom says to eat meat sparingly.
We get a lot of our protein from beans, nuts, and seeds.
We also try to eat the fat of meat sparingly by using non animal fats- olive oil, avocados, and coconut oil.

4. VEGGIES
Eat foods with enzymes before each meal (raw veggies, fruit, yogurt) 
These foods bring in live workers to help you digest the rest of the meal.
We love green smoothies, salads, or just raw veggies at the beggining of our meals.

5. FRUITS

Eat fresh fruit for dessert. (We also love it with our breakfasts.)
It totally satisfies a sweet tooth after dinner.
We limit baked treats or candies to special occasions instead of eating them daily.

Chocolate Syrup

2 T. Sugar
1 T. Cocoa
2 T. Hot water
1/8 t. Vanilla
Stir and heat in microwave for 20  seconds.
