Cheesecake Icecream

Finally! I mastered a nutritious ice cream. 

This is so good- and it is good for you!
It is loaded with protein (11g per serving), 
and low in fat (3.5 g per serving)
SMALL BATCH
Serves 8
Ingredients:
3 c. cottage cheese (24 oz)
1 c. skim milk
3/4 c. white sugar
1/4 c. brown sugar (omit for vanilla ice cream)
1/4 c. powdered milk
6 T. cocoa powder (omit for vanilla ice cream)
2 t. pure vanilla (4 t. imitation) (increase to 1 T. for vanilla)
pinch of salt

Directions:
1. Blend ingredients in a blender until smooth
2. Freeze in ice cream machine for 30 min


BIG BATCH (serves 20) ..makes about 1 gallon
for a traditional ice cream machine
Ingredients:
8 c. cottage cheese (24 oz)
2/3 c. powdered milk
2 2/3 c. skim milk
2 c. white sugar
2/3 c. brown sugar (omit for vanilla ice cream)
1 c. cocoa powder (omit for vanilla ice cream)
5t. pure vanilla (increase to 2T +2t. for vanilla)
1/8 + 1/4 t. salt

Directions:
1. Blend cottage cheese and powdered milk in a blender until smooth
2. Beat with remaining ingredients in a large bowl.
3. Freeze in ice cream machine for 30-40 min

Blender Milkshake-so good!!
Serves 4.   Serves 6
2c.              3c.Cottage cheese
1/3c.           1/2c. Milk
4T.+2t.       7T. Powdered milk
1/3-1/2c.       1/2- 3/4c. White sugar
4t.               2T. Imitation vanilla
                    Dash salt
3 1/3c.(27)   5c.(40)  Ice cubes
-blend all ingredients except ice cubes
-add ice cubes gradually and blend until smooth
-for Chocolate: add 2T.+2t. Brown sugar, 1/4c. Cocoa, and reduce vanilla to 2 1/2t.
-for Strawberry: add 2/3c -1c. Sweetened frozen strawberries and reduce sugar to 3-4T.
