Spaghetti Squash Spaghetti or Lasagna

Serves 6-8
Ingredients:
1 Medium Spaghetti Squash
1 lb. turkey burger or sausage
*24 oz can Spaghetti Sauce
2 c. cottage cheese (opt- for Lasagna)
1 c. shredded cheese

Directions:
1. Cut, clean out, and microwave squash for 15 min
2. Brown 1 lb. turkey burger or sausage (italian seasoned)
3. Add Spaghetti sauce to meat
4. Stir in cooked squash and optional cottage cheese
5. Place in large microwave bowl
6. Top with shredded cheese
7. Microwave for 8 min.

*Homemade sauce:
1 can tomato sauce  (8oz) (or 1c. blended tomatoes +1T. flour)
1 can diced tomatoes (15 oz) (or 1c. blended tomatoes)
1 T. dry basil
3/4 t. salt
1/4 t. pepper

Nacho Cheese Dip

Ingredients:
1c powdered milk
1 1/4c hot water
1T flour
1/2t red pepper
2t hot sauce
1/2t onion powder
1/2t garlic powder
1 1/8t salt
2 1/2 c shredded cheese

Directions:
1. Blend or whisk powdered milk, flour, and water until smooth.
2. Heat in a pot on medium heat. Stir in seasonings-keep stirring until thickens.
3. Add cheese and stir until melted.

Alfredo Dipping Sauce

Olive Garden Copycat
1/4 c. butter, melted
1/2 t. garlic powder
1/4 t. salt
1/16 t. pepper
1 c. sour cream
----heat through, then add:
1 T. greek yogurt
6 T. mozzerella cheese

Whole Wheat Applesauce Muffins

APPLESAUCE MUFFINS
Makes 1 dozen
Ingredients:
2 c. whole wheat flour
1/2 t. baking powder
1/4 t. baking soda
1/2 t. salt
1/4 c. sugar
1/4 c. powdered milk
1/2 t. cinnamon
Wet Ingredients:
1/4 c. greek yogurt or sour cream
1 c. applesauce (or 2 small bananas, mashed)
2 large eggs
Optional Ingredients:
1 c. zuccini
1/2 c. raisins
1/4 c. walnuts

Directions:
1. Stir dry ingredients
2. Add wet ingredients and barely stir
3. Grease 12 muffin tins
4. Bake at 350* for 14-17 min. (14 min if none of the optional ingredients)
*the baking powder, soda, and salt are half the amounts in cupcakes because liquid is half

PLAIN WHOLE WHEAT MUFFINS
Makes 1 dozen
Ingredients:
2 c. whole wheat flour
1/2 t. baking powder
1/4 t. baking soda
1/2 t. salt
1/2 c. sugar
1/2 t. cinnamon
Wet Ingredients:
1/4 c. greek yogurt or sour cream
1/4 c. oil
3/4 c. milk
2 large eggs

1. Stir dry ingredients
2. Add wet ingredients and barely stir
3. Grease 12 muffin tins
4. Bake at 350* for 12 min.

Egg-Less APPLESAUCE MUFFINS
Makes 1 dozen
Ingredients:
1 2/3 c. whole wheat flour
1/4 c. sugar
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 t. cinnamon
Wet Ingredients:
1 1/4 c. applesauce
1 c. milk
2 T. oil
1/2 t. vanilla
1/2 c. raisins
Directions:
1. Stir dry ingredients
2. Add wet ingredients and barely stir
3. Grease 12 muffin tins
4. Bake at 375* for 18 min.
