Whole Wheat Applesauce Muffins

APPLESAUCE MUFFINS
Makes 1 dozen
Ingredients:
2 c. whole wheat flour
1/2 t. baking powder
1/4 t. baking soda
1/2 t. salt
1/4 c. sugar
1/4 c. powdered milk
1/2 t. cinnamon
Wet Ingredients:
1/4 c. greek yogurt or sour cream
1 c. applesauce (or 2 small bananas, mashed)
2 large eggs
Optional Ingredients:
1 c. zuccini
1/2 c. raisins
1/4 c. walnuts

Directions:
1. Stir dry ingredients
2. Add wet ingredients and barely stir
3. Grease 12 muffin tins
4. Bake at 350* for 14-17 min. (14 min if none of the optional ingredients)
*the baking powder, soda, and salt are half the amounts in cupcakes because liquid is half

PLAIN WHOLE WHEAT MUFFINS
Makes 1 dozen
Ingredients:
2 c. whole wheat flour
1/2 t. baking powder
1/4 t. baking soda
1/2 t. salt
1/2 c. sugar
1/2 t. cinnamon
Wet Ingredients:
1/4 c. greek yogurt or sour cream
1/4 c. oil
3/4 c. milk
2 large eggs
Directions:
1. Stir dry ingredients
2. Add wet ingredients and barely stir
3. Grease 12 muffin tins
4. Bake at 350* for 12 min.

Egg-Less APPLESAUCE MUFFINS
Makes 1 dozen
Ingredients:
1 2/3 c. whole wheat flour
1/4 c. sugar
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 t. cinnamon
Wet Ingredients:
1 1/4 c. applesauce
1 c. milk
2 T. oil
1/2 t. vanilla
1/2 c. raisins
Directions:
1. Stir dry ingredients
2. Add wet ingredients and barely stir
3. Grease 12 muffin tins
4. Bake at 375* for 18 min.
