Spaghetti With Meatballs


Serves 8 (makes 24 meatballs)
MEATBALL ingredients:
20 oz (1.3 lb) lean ground turkey
1/4 c. whole wheat bread crumbs
1/4 c. cheese
1 t. dry parsley
1 egg
1/2 t. minced garlic
1 t. salt
1/8 t. pepperoni

Sauce ingredients: 
2 cans tomato sauce
2 cans diced tomatoes (can blend)
2 T. dry basil
3/4 t. salt
1/4 t. pepper
(or 2 24oz cans spaghetti sauce)

Directions:
1. Form golf ball size balls (1/8 c.) out of the meat
2. Cook meatballs in sauce for 20 min. simmering
3. Boil 1 lb. spagetti noodles in pot of water for 8-10 min 
4. Drain noodles and serve with sauce on top

Serves 24 (times meatballs by 3 for big crowds or freeze for later use)

3 T. dry parsley
3 eggs
1 1/2 t. minced garlic
1 T. salt
1/4 + 1/8t. pepper
